We have learned that carbohydrates make us gain weight and prevent us from losing weight. But why does this happen and why just in the last few decades? In the past, people could eat carbs and they did not gain weight. Just saw old movie pictures where everybody was slim as a stick! What happened in these few decades? A study found that people who ate  20%, 40%, 60% carbohydrates in their diet, had difficulty losing weight even when their daily calorie content was the same in all groups. The more carbohydrate consumed, the harder to lose weight and the more weight packed in. First, carbohydrates are not satiating, people eat more and more. Second carbohydrates are addictive; you cannot just have one! Even after you are full, you still have room for dessert! One cannot think of ending a meal without having something sweet! But why is it worse now than before? Apparently insulin is lately causing havoc in our metabolism and increasing fat deposition. Our food is lately full of pesticides, more than ever! Pesticides poison our microbiome. Microbiome of the gut can dictate whether you are going to be healthy or sick. We import food from all over the world especially from Asia and South America, countries which use a lot of pesticides. Because mothers are so busy working , they purchase processed foods which may aggravate the situation even more.  This combination of factors and a change in our hormones may explain partially why we have an unresolved obesity epidemic
